in olive cultivation addicted areas, such as Apulia.
3 • HAND OR MACHINE OLIVE HARVESTING,
directly from the plant and not from the ground after bad weather or over-ripening.
4 • ONLY USE OF RIGHT RIPENING LEVEL OLIVES,
just keeping their best flavour and not the over-ripened ones.
5 • OLIVE TRANSPORTATION TO THE OIL MILL IN WELL VENTILATED BOXES,
rather than in canvas or plastic bags, causing so mould, because of transpiration lack.
6 • MILLING PROCESS MUST BE CARRIED OUT BY 24 HOURS,
from the harvesting.
7 • USE OF MODERN AND HYGIENICALLY PERFECT MACHINES.
